It's been a while since I've blogged on the food. Here's a sample of what's been powering my recent training:

Mom's Smoked Salmon Fried Rice
I got this one straight off of allrecipes.com. I only changed it by doubling the salmon - from 4 oz. to 8oz.

INGREDIENTS:
6 cups water
3 cups long grain white rice, uncooked
3 tablespoons cooking oil, divided
2 eggs, beaten
1/2 onion, finely chopped
1 green onion, chopped
8 ounces smoked salmon, chopped
1/2 cup frozen peas
salt and freshly ground pepper, to taste
DIRECTIONS:
1. Pour the water into a saucepan, add the rice, and bring to a boil. Cover, reduce heat to low, and simmer until rice is tender and water is absorbed, about 20 minutes. Set aside.
2. Meanwhile, place 2 tablespoons of cooking oil into a large skillet and heat over medium heat. Stir in the eggs and cook until scrambled to desired consistency. Remove eggs from the pan, and set aside.
3. Using the same skillet, add the remaining 1 tablespoon oil, and heat over medium heat. Stir in the onion and green onion; cook until the onion is transparent, about 5 minutes. Stir in the salmon, rice, peas, and scrambled eggs, and toss until evenly blended. Cook and stir rice mixture until heated through. Season to taste with salt and pepper.

Tortilla Pizzas
I've made two different version of these. Both have been easy and delicious! All the amounts listed in these pizza ingredients are approximate, as I just made them without measuring anything.


Hummus and vegi

1 multigrain flatout brand tortilla
1/2 onion finely diced
1 cup small cauliflower florets
1/4 cup garlic hummus
olive oil
1/2 cup part-skim mozzarella cheese
1/4 cup Parmesan cheese
2 tsp. garlic salt

Preheat oven to 450 degrees. Spray both sides of toritilla with oilive oil. Spread hummus in a thin layer over top of tortilla. Sprinkle onion and cauliflower ontop. Top with both cheeses. Sprinkle salt to taste. Cook for 12 mins or until top is brownish and bubbly.


Fried fresh vegetable

1 multigrain flatout brand tortilla
1 diced tomato
1 finely diced onion
1 small package sliced mushrooms
3 heads minced garlic
1/2 cup part-skim mozzarella cheese
1/4 cup Parmesan cheese
olive oil

Preheat oven to 450 degrees. Spray both sides of toritilla with oilive oil. Warm 1 tbsp. olive oil over medium heat. Saute onion until translucent. Add mushrooms and saute until both start to brown, then remove from heat. Sprinkle tomato evenly over tortilla, then add enough of the onion, mushroom saute to cover. Sprinkle cheeses over top. Cook for 12 mins or until top is brownish and bubbly.


Buffalo Burgers

16oz. grass-fed ground buffalo
1 onion finely chopped
3 heads garlic, minced
3 tbsp cocktail sauce
1 omega-3 egg
1/3 cup mozzarella cheese
1/3 cup wheat germ
salt and pepper to taste

Preheat top oven broiler. Combine all ingredients in a large boil. Mix with hands until just combined. Form into four patties. Warm 1 tbsp olive oil in a large pan over medium-high heat. Brown the patties for about 30 seconds per side. Move patties to a foil lined cookie sheet, then put them in the top rack of the oven. Cook for about 5-6 mins per side, or until the burgers look about done.


Frozen fruit recovery smoothie

3 cups frozen mixed fruit
1 1/2 cups milk
drizzle of honey

Combine all ingredients in a large blender. Blend; drink.

frey, either publish to blog or send me your favorite hummus recipe, bought some store bought and it was not as good as what you gave me in FL
